Savoury French Toast with Pecorino & Radish

Got some leftover bread lying around? Don’t throw it out but rather turn it into the best savoury French toast you’ve ever had. Soaked in an herby egg mix, pan-fried golden in butter, topped with sharp pecorino, crisp radish, and a drizzle of olive oil. A little crispy, a little creamy, and very satisfying.


Ingredients (Serves 3-4)

  • A few slices of bread - I prefer using dark bread if available

  • 3–4 eggs

  • A generous splash of milk

  • Oregano powder, to taste

  • Salt & pepper, to taste

  • A knob of butter (for frying)

  • A handful of radishes, cut into quarters

  • A chunk of pecorino cheese, freshly grated

  • A drizzle of olive oil


INSTRUCTIONS

Step 1: Make the egg mixture

In a wide bowl, whisk together the eggs, milk, oregano powder, salt, and pepper.

Step 2: Soak the bread

Dunk the bread slices into the mixture and let them soak well on both sides. You want them soft and fully coated.

Step 3: Cook the French toast

Heat a pan over medium heat and add a bit of butter. Cook the soaked bread slices until golden and set on both sides.

Step 4: Top and finish

Once off the heat, grate pecorino generously over the warm toast. Add a few radish quarters on top, drizzle with olive oil, and finish with a pinch of salt & pepper.

Best served warm, with a tea or coffee on the side and nothing else on your to-do list. Simple food, done well is all that’s needed sometimes.
